Mango: Buddha loved this magnificent fruit and often meditated under the branches of a mango tree. Bursting with carotenes, vitamin C, copper, and almost twice the recommended daily allowance of vitamin A, mangoes have one of the largest seeds of any fruit. They are also good sources of vitamin E, potassium, iron, and magnesium. Mangoes are over 80 percent water, and are an excellent source of soluble and insoluble fiber. Sweet and juicy mangoes are powerful storehouses of carotenoids, antioxidants, and phytonutrients. Long before the discovery of chemical compounds in food, Ayurveda considered mangoes the king of fruits. Investigators have found evidence that mangoes may prevent certain types of cancers. In one study on cancer cells in mice, mangoes in a water-soluble solution were 10 times as effective in preventing cancer as isolated mango carotenes. Mangoes symbolize undying love in India, and antioxidant-filled fruit helps the heart and supports a healthy cardiovascular system. Indian healers suggest mango cures anemia, as their high iron content can help build blood. Use mango's calcium and magnesium to prevent muscle cramps. In fact, mangoes are great for pregnant women who need minerals, fiber, water, and antioxidants. Preparation tip: Mango Lassi: Cut the mango down the middle twice, leaving the seed in the middle. Scoop out the soft mango fruit out of the skin, chop, and put in a blender. Add ½ cup yogurt and 1½ cups water. Blend and serve.
